So you want to learn how to make lemon bars? Or maybe you already know but need a new recipe. You have come to the right place! This recipe came to me through a family member a few years back and I have not let go of it ever since! Lemons are my favorite, they are zesty, sour, and go well with just about anything from tea to soup! I even eat lemons by themselves with salt. I am getting off topic. Lemon bars. They are great. Perfect for summer or a midnight snack. This recipe is in two parts. You make the crust first and then the filling. If you like more zesty than sweet then I suggest that you alter the measurements to your liking.
2 C Flour
1/2 C Sugar
1/4 t Salt
2 Sticks (1 C) Butter, Softened
1 1/2 C Sugar
1/4 C Flour
4 Lemons, Medium size, zested and juiced.
Preheat oven to 350, ovens can vary heat to your oven.
Mix flour, sugar, salt together
Add butter in, mix until crumbs form.
Press evenly into pan, recommended 9×13. Bake until golden brown (18-22 minutes).
Combine flour and sugar.
Add eggs, lemon juice and zest to flour mixture
Pour over golden brown crust and bake for 18-20 minutes.
Allow the lemon bars to cool down before adding the powdered sugar on top. These can be served warm or cold. I prefer them a little warm but that is my preference.
